- Peel the kohlrabi carefully and cut it into small cubes.
- Heat a tablespoon of olive oil in a large pan over medium heat.

- Pour in the vegetable broth, seasoning generously with salt and pepper.
- Cover the pan and simmer for 15-20 minutes until the kohlrabi is tender.
- Remove the pan from heat, drizzle with fresh lemon juice, and garnish with chopped herbs.
